In jelly, you are working with fruit juice. It will tend to be clear in appearance. This also yields a more stiff product.
In jam, you are working with delicious chunks of fruit, and the product will be less dense.
Whenever possible, we try to use organic fruit and locally sourced fruit. We hand pick the peaches, figs, apples & citrus ourselves from trees left alone to grow as nature intended (we only add water to the soil).
We let Mother Nature do her thing so we can enjoy the fruit!
Government guidelines state that jelly or jam can be stored, unopened, for up to 12-18 months.
Once you open your jam, it must be refrigerated and can be enjoyed for up to three months.
With jelly, you can enjoy your opened and refrigerated product for up to one year.
Since we are using fruit from own trees or plants we have (or can hike to), we make our jelly jams in small batches.
We are also Arizona Cottage Food Program approved.
